After a very challenging winter (at least here in Southern California where we actually had blizzards that left ten feet of snow in the local San Gabriel and San Bernardino mountains), we are so ready for spring! In most of the country, you can get most any vegetable any time of the year, because we import many items from places like Mexico and Central America. But beginning in March and April, spring vegetables are ready for action and local produce becomes readily available at markets—farmers and super. Here are a variety of spring vegetables that are especially sweet and delicious […]
We’re well into spring, so presumably your mood has already lifted from a couple of months ago. But it certainly makes sense that what you eat has lots to do with how you’re feeling about yourself and the world. With longer hours of sunshine (which helps your body use vitamin D for bone health) and the bounty of spring fruits and vegetables available, it’s easy to avoid nutritional deficiencies that increase inflammation within the body, which can contribute to a number of maladies and diseases. For example, there is evidence that depression can be caused by a low-level inflammatory disorder […]
Do you have a cast iron skillet among your pots and pans? I do, and I have to admit that I have a love/hate relationship with it. The thing is heavy! I can barely lift the nine-inch one with one hand. And cleaning them is something else. You’re not supposed to use soap—just scrape, rinse and dry immediately. Don’t leave it wet or you risk rust! It should be stored seasoned with a little neutral oil (like avocado) and covered in parchment so it doesn’t mess up your other pans. BUT– The way a cast iron skillet cooks food is […]

Mark Alyn Cooks Show We cooked from “Anti-Aging dishes From Around The World” – Barbara Weller, from FoodTrients® joins us for a fun and easy to make Veracruz Street Corn Bowl. A Vegan dish, it’s packed with nutrients and flavor. Veracruz Street Corn Bowl Mexican street corn (maíz callejero) is roasted ears slathered with chile powder and mayonnaise. My version treats the corn with a lighter touch, calorically speaking, and includes black beans, brown rice, and the crunch of Romaine and jicama. Benefits: Black beans contain protein, tissue-repairing lysine, vitamin B-6 for producing energy, calcium for building strong bones, […]
Chicken breasts are the perfect vehicle for zesty tropical flavors. Calamansi is a citrus hybrid also known as Philippine lime. It’s popular in Asian (especially Southeast Asian, Malaysian, and Indonesian) cuisines. If you can’t find it in an Asian market, you can use more traditional limes or lime juice. My Tropical Mango Habanero Salsa is not just good with chips, it’s also delicious over grilled chicken (or even steak or shrimp). You can serve this dish alongside my Jamaican Rice with Curried Corn, which is another delicious recipe in my new cookbook, Anti-Aging Dishes from Around the […]
