Acai Sorbet Is a Purple Powerhouse of a Dessert

Açaí Sorbet Açaí berries are deep-purple powerhouses, super-rich in antioxidants and anthocyanins. Both properties are great for keeping your body young and healthy. This beautiful frozen confection is very easy to make. Servings 2-4 Ingredients  1 egg white 3 Tbs. sugar 2 cups açaí juice Procedure Using a stand or hand-held mixer, whip the egg white and sugar until soft peaks form, about 5 minutes. Fold in the açaí juice. Transfer the mixture to an ice cream machine. Follow ice cream machine freezing instructions until the sorbet achieves the texture of soft-serve ice cream, about 30 minutes.  Make a Beet and Potato Salad with a Twist

Beet and Potato Salad This recipe is my take on the Russian version of potato salad. The wonderful deep-purple color of beets signifies the presence of helpful betalains, which are phytonutrients that support your body’s detoxification systems. Beets are also a great source of folate and fiber. Potatoes are a good source of vitamin B6 and vitamin-C. Serve 6 Ingredients 6 medium red beets, skin on 8 quartered small white potatoes 1⁄4 lb. diced carrots 1⁄4 lb. diced string beans 1 cup white wine vinegar 1⁄4 cup sugar 2 tsp. kosher salt 1⁄4 tsp. white pepper 1 seeded, peeled, and […]

Game Hen & Rice Combine for Hearty Stew

Cornish Game Hen and Brown Rice Stew This thick and hearty stew is my take on the classic Asian chicken soup. The brown rice makes it even healthier thanks to its high-fiber, selenium-rich properties. Feel free to add carrots, celery, or spinach to the mix. Add hard vegetables earlier in the cooking process and greens or herbs later. I like to soak the brown rice overnight before cooking it. This shortens the cooking time by about 20 minutes. Serves 4-8  Ingredients  1 inch peeled gingerroot 1 Tbs. canola oil 1⁄4 cup chopped onion 1 whole Cornish game hen, cut into […]

Pork Loin Pockets Are a Meal With Big Benefits

Pork Loin Pockets I spread pork tenderloin slices with tomato paste to give this dish the antioxidant  benefits of licopene. Canadian bacon has less fat than its American counterpart. It also adds a lot of flavor. Sulfur compounds in onions are great anticancer agents. Onions also contain antioxidants and quercetin. Steamed carrot sticks and broccoli make a nice accompaniment to these tasty pockets. Serves 6-8 Ingredients 1 pork tenderloin (about 1 lb.), cut into 8 slices Sea salt and ground pepper to taste 1 can (6 oz.) tomato paste 8 slices Canadian bacon 1⁄4 cup flour 2 beaten medium eggs […]

Baked Lobster Tails

Lobster not only tastes delicious, but its succulent flesh is loaded with Omega-3s, selenium, zinc, and B vitamins, which protect the brain and fight against cancer cells. The olive oil mayonnaise brings additional anti-inflammatory benefits while helping to prevent the tender lobster meat from drying out in the oven. Serves 2 Ingredients 2 lobster tails Sea salt and ground pepper to taste 2 Tbs. lemon juice (about 1 lemon) 1–2 Tbs. olive oil mayonnaise 1 Tbs. grated Parmesan cheese Lemon wedges as garnish Chopped parsley as garnish   Procedure  Preheat oven to 350 degrees. Arrange the lobster tails shell side […]

Home-Smoked Fish

This recipe uses a procedure that allows you to create smoked fish at home without using a smoker. Though it takes approximately 6 hours to brine, marinate, and bake the fish, it does not require considerable effort. The secret ingredient is hickory-flavored liquid smoke. Leaving the bones in the fish keeps it firm while it’s “smoking.” Serves 4-6 Ingredients 4 lb. fresh trout, salmon, or mackerel, cleaned and gutted 1 cup kosher salt dissolved in 4 cups water 1 cup olive oil 1⁄4 cup hickory-flavored liquid smoke Lemon slices as garnish Rock salt (optional) Fresh herbs (optional)   Procedures Leave […]

Shrimp in Tomato Sauce Mediterranean Style

Shrimp and tomatoes are a very Mediterranean combination. I use soy sauce in place of salt and add Worcestershire sauce to create a nice depth of flavor. You’ll get selenium from the shrimp, allicin from the garlic, and lycopene from the tomatoes. Serves 2 Ingredients 3 Tbs. olive oil 1 Tbs. chopped garlic 1 cup chopped onion 1 can (8 oz.) tomato sauce 2 tsp. soy sauce 2 tsp. Worcestershire sauce 3⁄4 lb. peeled shrimp (devein, if desired) Chopped parsley as garnish Chopped chives as garnish   Procedure Heat the olive oil in a large skillet over medium-high heat. Add […]

Delicious Dishes That Can Help You Detox

We’re well into the new year, so it’s time to think about cleaning out our systems and starting fresh. However, I’m not going to suggest a juice cleanse or an exotic tea. You can try these from time to time for a short while, but you can also detox in other ways. Why not enjoy delicious foods that support the body’s natural detoxification systems, including that vital organ/filter, the liver? What exactly is “detoxification?” It’s the processing and removal of compounds in the body that cause damage to tissues. We often associate detoxing with expensive specialty products, vitamins/minerals, herbal extracts/teas, or other […]
