Savory and Satisfying Dishes with Mushrooms

Most people either love or hate mushrooms. But hear me out: the beauty of mushrooms is that they take on the flavor of whatever they’re cooked with. They become Asian cooked in a soy or teriyaki-style sauce. They’re Italian sauteed in olive oil, garlic and fresh basil. Sprinkle middle Eastern spices on them such as zaatar or sumac and they become Moroccan or Lebanese. For those who want to cut down on eating meat, a portobello mushroom grilled and placed in a hamburger bun is very satisfying.  Mushrooms provide that ‘fifth taste’ (joining sweet, salty, sour and bitter), umami, which […]

Miraculous Mushrooms Are a Food Powerhouse

Most of the people I know have very strong feelings about mushrooms—they either love them or hate them. One of the beauties of mushrooms is that they usually take on the flavor of whatever they are cooked with. If it’s garlic and olive oil, that’s what they taste like. If they’re in a spicy Asian stir fry, they take on those flavors. One thing is certain — mushrooms are healthy little powerhouses of immunity boosters, antioxidants, vitamins and minerals. Rich in B vitamins such as riboflavin, folate, thiamine, pantothenic acid, and niacin, they are also the only vegan, non-fortified dietary […]

Reishi Mushroom: A Cancer-Fighting Hero

Mushrooms are a major FoodTrient food! Both edible and medicinal mushrooms contain FoodTrient properties including anti-inflammatory, antioxidant, immune boosting, and disease prevention effects. Two mushrooms backed by research that contain potent health benefits include Reishi and Turkey Tail mushrooms. Reishi mushrooms aren’t something you will find in your local grocery store. Though all mushrooms have health promoting properties including vitamins, minerals, antioxidants, fiber and immune-boosting compounds like beta-glucans, some mushrooms are more edible than others. Reishi mushrooms are made of non-digestible fiber and have a woody texture. More potent health benefits are said to come from young reishi mushrooms rather […]

Mushrooms May Help Develop New Diabetes Treatments

Eating white button mushrooms may improve the regulation of glucose in the liver, according to a study which could pave the way for new diabetes treatments and prevention strategies. Feeding white button mushrooms to mice changed the composition of gut microbes – microbiota – to produce more short chain fatty acids, specifically propionate from succinate, according to Margherita T Cantorna, a professor at Pennsylvania State University in the US. Previous research has shown that succinate and propionate can change the expression of genes needed to manage glucose production, she said. “Managing glucose better has implications for diabetes, as well as other metabolic […]

What Can Mushroom Supplements Do?

Neither fish nor foul, not animal nor even technically a plant, mushrooms occupy a nether-region of life, with tantalizing health benefits such as better athletic performance and even, perhaps, an answer to cancer. Mushrooms are much more than just stir-fry fodder. Mushroom compounds called polysaccharides have been studied for decades for improving immunity. Beta-glucans in mushrooms have been proposed to act as “biological response modifiers,” based on their effects on the immune system. This means that they don’t so much stimulate the immune system as they simply make it work better. Want more mushroom magic? A few years ago a […]

Mushrooms May Have Anti-aging Potential

Your favorite pizza topping could you help fight aging! A team of Penn State researchers found mushrooms are rich in antioxidants that scientists say could be used fight aging and boost general health. The study suggests that mushrooms have high amounts of the ergothioneine and glutathione, both important antioxidants, said Professor Robert Beelman. He added that the researchers also found that the amounts the two compounds varied greatly between mushroom species. “What we found is that, without a doubt, mushrooms are highest dietary source of these two antioxidants taken together, and that some types are really packed with both of them,” […]
