Weller Red Cabbage
This cherished Weller family recipe for red cabbage with bacon is a beautiful blend of comfort and nourishment. The gentle sweetness of the cabbage pairs perfectly with the savory richness of bacon — though you can easily leave it out for a lighter, plant-forward version that’s just as satisfying. It’s a wonderful complement to turkey and game meats like venison or buffalo, especially during the cooler months.
1. Broil the bacon in the oven for 5–7 minutes or until it begins sizzling on top. Turn over and broil another 3–5 minutes or until crisp.
2. Drain the bacon, cool on paper towels, and crumble into small pieces. Place in a small serving dish and set aside.
3. In a heavy enamel-covered or glass pan over medium heat, warm the oil and melt the butter.
4. Add the onion and sauté about 5 minutes or until translucent.
5. Add the cabbage, vinegar, and water. Reduce the heat and cook, covered, for 30 minutes, stirring occasionally.
6. Uncover, stir in the xylitol or sugar, and cook an additional 3–5 minutes or until the xylitol or sugar has fully dissolved and the cabbage is tender.
7. Serve with the crumbled bacon on the side.

1 Tbs. olive oil
1⁄2 Tbs. butter
3⁄4 cup sliced onion (red, brown, or white)
2 cups shredded red cabbage
1⁄2 cup apple cider vinegar
2 Tbs. water
1⁄2 cup xylitol or brown sugar
