Roasted Parsnips Are Loaded With Flavor and Benefits
Roasted parsnips deliver perfect flavor and fiber. Nothing brings out the natural sweetness and earthiness of parsnips like roasting. Looking very much like a creamy white carrot, parsnips also share with carrots that frigid temperatures during growing and harvest make them sweeter; they go especially well with pork, chicken, and other fruits and vegetables such as apples, carrots, pears, and spinach. Benefits This dish is not only a flavorful side dish but also provides a range of health benefits. Parsnips are high in fiber, particularly soluble fiber, which helps regulate blood sugar levels and supports digestive health by promoting elimination. […]READ MORE

The feta cheese in the salad provides protein and calcium. Hint: if you can buy the feta in bulk from a Greek, Persian, or other Middle Eastern deli, do it! Packaged feta will do, but feta from the deli case tastes better. Pine nuts are a good source of B vitamins, folate, niacin, thiamin, riboflavin, and manganese. You can buy pine nuts pre-toasted. Leafy green arugula and extra virgin olive oil provide anti-inflammatory properties as do the berries. The salty feta and the sweet berries play beautifully together! Serves 4 Ingredients 1 cup Greek feta cheese, cubed ½ cup extra […]

Citrusy Asparagus Asparagus is a finicky vegetable. It must be very fresh and picked early in the season or it will have woody stalks. Don’t cut the dry ends of the stalks. Instead, bend the stalks until the dry ends break off. Otherwise you risk serving chewy, inedible asparagus parts that your guests won’t enjoy. This citrusy side dish can be served hot or cold and is good cut up and served in a salad. Serves 4-6 Ingredients 2 lbs. asparagus spears, ends snapped off 4 Tbs. orange juice 1 Tbs. fresh lemon juice ½ tsp. sea salt or salt […]

Green Tea Noodles with Edamame Green tea, with its powerful theaflavins, is a strong antioxidant with vigorous anti-inflammatory properties, a heart-healthy addition to anyone’s diet. Green tea is wonderful to drink on its own, but it also can be incorporated into recipes. I use an old Asian trick for mixing more green tea into your diet with my Green Tea Noodles with Edamame. It’s an easy and budget-friendly recipe. Just boil soba, udon, or ramen noodles in green tea instead of water. Green tea has far more age-fighting power than water. If you want to eat these noodles cold, rinse […]

Vegetarian Stir-Fried Annatto Noodles These colorful noodles, which are made with my Annatto Oil and Annatto Water, are as delicious as they are healthful. They can be served as a main course, appetizer, or side dish. I use cornstarch noodles, but you can use glass or rice noodles. You can substitute other varieties of mushroom, and almost any cabbage will work–Napa, savoy, bok choy, green, or even red. You can use store-bought vegetable broth instead of homemade. This is a gluten-free dish, so I use tamari sauce instead of soy sauce. Bragg Liquid Aminos provides even more flavor. BENEFITS: Annatto […]
