                      Sweet & Savory Red Cabbage with Apple & Crispy Bacon

                      Sweet & Savory Red Cabbage

                      With its deep purple color and crisp texture, red cabbage is a wonderful example of how colorful foods can help nourish the body. Naturally rich in fiber and antioxidant phytonutrients called anthocyanins, red cabbage helps support gut health, reduce inflammation, and promote healthy aging.

                      This comforting dish brings together the natural sweetness of cabbage and apple with savory flavor for a balanced and satisfying side. For a lighter, more plant-forward version, the bacon can easily be omitted while still creating a delicious and nourishing dish.

                      It pairs beautifully with turkey, barbecue dishes, and other savory meals.

                      Instructions

                      1. Broil the bacon in the oven for 5–7 minutes or until it begins sizzling on top. Turn over and broil another 3–5 minutes or until crisp.
                      2. Drain the bacon, cool on paper towels, and crumble into small pieces. Place in a small serving dish and set aside.
                      3. In a heavy enamel-covered or glass pan over medium heat, warm the oil and melt the butter.
                      4. Add the onion and sauté about 5 minutes or until translucent.
                      5. Add the cabbage, vinegar, and water. Reduce the heat and cook, covered, for 30 minutes, stirring occasionally.
                      6. Uncover and stir in the diced apple and maple syrup. Continue cooking uncovered for 5–7 minutes, stirring occasionally, until the apple softens slightly, the flavors meld, and the cabbage is tender with a balanced sweet-tangy finish.
                      7. Serve with the crumbled bacon on top or on the side.

                      Serves 2–4
                      2 slices uncured bacon
                      1 Tbs. olive oil
                      1/2 Tbs. butter
                      3/4 cup sliced onion (red, brown, or white)
                      2 cups shredded red cabbage
                      1/2 cup apple cider vinegar
                      2 Tbs. water
                      1 small Honeycrisp or Fuji apple, finely diced
                      1–2 Tbs. pure maple syrup (adjust to desired sweetness)
