YIELDS 24 Cookies
1 cup rolled oats (not instant or steel-cut)
1 cup whole wheat pastry flour
1 cup all-purpose flour
1 tsp. cinnamon
½ tsp. sea salt
1 tsp. baking soda
1 whole egg
2 Tbs. canola or grapeseed oil
1/3 cup applesauce (unsweetened)
½ cup maple syrup
2 tsp. pure vanilla extract
1 cup chopped walnuts
1 cup semi-sweet chocolate or butterscotch chips
1. Preheat oven to 350ᵒ F.
2. Combine oats, flours, cinnamon, sea salt, and baking soda.
3. In a separate bowl, blend egg, oil, applesauce, maple syrup and vanilla.
4. Pour liquid mixture into dry mixture and stir well to combine. Fold in walnuts and chips.
5. Drop spoonful’s of dough onto a baking sheet and bake 12-14 minutes until golden brown.
