Carrot Quiche: A Fresh & Nourishing Brunch

A beautiful quiche is one of my favorite dishes to serve when entertaining—perfect for a relaxed Sunday brunch or spring lunch with family and friends. Simple, elegant, and make-ahead friendly, it allows you to enjoy the moment without the rush.
This Carrot Quiche is a go-to for me this time of year. The carrots add natural sweetness and vibrant color, while their slight firmness creates a lovely contrast to the silky, custard-like filling.

SERVES 6-8
Crust
- 1 (9-inch) whole-wheat pie crust (or your favorite quality crust)
Filling
- 1–2 tsp extra-virgin olive oil
- 4 slices turkey bacon, chopped (optional)
- 2 tsp chopped garlic
- ½ cup chopped onion
- 1 cup diced fresh mushrooms
- 4 large eggs + 2 egg whites
- ½ cup half-and-half (or whole milk)
- ¼–½ cup plain Greek yogurt
- 2–3 Tbs whole wheat flour or arrowroot powder
- Sea salt and freshly ground black pepper, to taste
- 2 cups shredded carrots
Instructions
- Preheat oven to 375°F. Place pie crust into a 9-inch pie dish and set aside.
- Sauté the vegetables:
Heat olive oil in a skillet over medium heat. Add turkey bacon (if using) and cook until lightly browned. Add garlic, onion, and mushrooms; sauté until softened and fragrant. Remove from heat. - Prepare the filling:
In a large bowl, whisk together the eggs, egg whites, half-and-half, and Greek yogurt until smooth. Stir in flour (or arrowroot), salt, and pepper. - Assemble:
Spread the sautéed mixture evenly over the crust. Add shredded carrots. Pour the egg mixture over the top, gently pressing ingredients down so everything is evenly distributed.
Bake:
Bake for 35–40 minutes, or until the center is set and the top is lightly golden.- Cool and serve:
Let rest for 10–15 minutes before slicing. Serve warm or at room temperature.
