Shrimp in Tomato Sauce Mediterranean Style

Shrimp and tomatoes are a very Mediterranean combination. I use soy sauce in place of salt and add Worcestershire sauce to create a nice depth of flavor. You’ll get selenium from the shrimp, allicin from the garlic, and lycopene from the tomatoes.

Ingredients
3 Tbs. olive oil
1 Tbs. chopped garlic
1 cup chopped onion
1 can (8 oz.) tomato sauce
2 tsp. soy sauce
2 tsp. Worcestershire sauce
3⁄4 lb. peeled shrimp (devein, if desired)
Chopped parsley as garnish
Chopped chives as garnish
Procedure
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté until it starts to turn golden brown, about 1–2 minutes.
- Add the onion and cook until translucent, about 2–3 minutes.
- Add the tomato sauce, soy sauce, and Worcestershire sauce and bring to a boil. Cover, reduce heat, and simmer for 10 minutes.
- Add the shrimp and cook about 5–7 minutes.
- To serve, spoon over white or brown rice and garnish with parsley and chives.
