Taste the Warmth of Hearty Winter Vegetables

It’s that time of year when the sun sinks too early and you’re ready to light a fire, or at least scented candles. While we might think longingly back on summer and its exuberant offerings of fresh tomatoes, luscious stone fruit and tender baby greens, it’s time to relish in the bounty of winter vegetables. Carrot Quiche

Carrots are well known for their beta-carotene content, which our bodies convert into vitamin A, a powerful antioxidant that is needed for healthy immune function. Carrots have hundreds of other cartenoids that help inhibit cancer growth. They also contain lutein, which is beneficial to eye health. Our bodies process the nutrients in carrots more efficiently when they are cooked. In this quiche, the carrots stay bright orange and firm, a nice contrast to the silky custard base. SERVES 6-8 Ingredients 1 (9-in.) whole-wheat pie crust 2 tsp. canola oil 4 slices turkey bacon, chopped 2 tsp. chopped garlic 1/2 cup […]

Mind and Beauty Juice

This juice blend is specifically formulated to help the skin look young and beautiful while protecting the mind. I use my Blendtec® Tabletop Total Blender to pulverize the carrots, cantaloupe, and cucumber. Carrots and melons have carotenoids, an antioxidant that fights skin aging. Cucumbers have silica, a mineral that helps skin retain moisture. I add a raw egg white for its collagen-building strength and its choline which supports healthy brain function. And I stir in nutritious green tea because its catechins will help keep teeth cavity-free and brains sharp. Serves 2 Ingredients 1 (16-oz.) bag of organic baby carrots ½ cantaloupe, rind […]

In America, I eat it with BBQ, grilled meat, and smoked fish. Papayas contain papain, an enzyme that helps break down proteins. This is why I sometimes use green papaya as a meat tenderizer. (There is less papain in ripe […]
