Fight Allergies with Apple Barley Salad!

When pollen is flying through the air on a summer breeze, foods that reduce allergy symptoms can be a lifesaver. I immediately head to my kitchen to make my Apple Barley Salad. Eating specific compounds—such as the FoodTrients omega-3 fatty acids, curcumin, gingerol, oleuropein, and quercitin, as well as probiotics—go a long way toward reducing the swelling of nasal passages and the production of antihistamines. The old adage about an apple a day is really true for allergy sufferers. Apples contain quercitin, which supports the immune system, reduces inflammation, and may reduce allergic sensitivity. Quercitin is found not only in […]

Gluten-Free Pigs in a Blanket

Since going gluten-free there have been many foods that I’ve had to bid farewell to. Thankfully the food industry has been quite kind to us as of late, and the majority of these things I’ve been able to find pretty good gluten-free versions of, or at least learned to make something almost as good. Pizza? Check. French Toast? Check. Cinnamon Buns? Big Check. Pigs in a blanket have remained a distant, delicious memory. Until now. Whether you want to make your own batch or would rather throw frozen franks in the oven, we’ve got you covered. Those of us that bake […]

It’s a Melt-in-Your-Mouth Chocolate Mousse

Dark Chocolate Mousse It’s hard to imagine, but this vegan version of chocolate mousse offers the same satisfaction as its richer, less healthy sibling. Contributed by my colleague Dr. Lynn Blair, it has all of the same creaminess, the satiny, melt-in-your-mouth pleasure, and the full, no-holds-barred taste you expect from a dense and rich chocolate mousse. And if that’s not enough, just add plenty of great health benefits. Soy contains isoflavones, which help preserve bone density, lower your risk of certain cancers, and may alleviate menopausal symptoms. Dark chocolate has catechins, which are neuroprotective, and theobromine, which improves blood flow […]

Key Gluten-Free Carbs You Need To Include in Your Diet

When you found out you had to follow a gluten free diet, you probably had some anxiety. How were you going to eliminate major staples like bread, pasta, and cereal from your diet? The reason why it’s so difficult is because these foods are omnipresent throughout the average American diet. For the cereal-eater, breakfast becomes tough. For the sandwich-eater, lunch becomes challenging. For the pasta-eater, dinner becomes a struggle. The fact is, carbohydrates are important—and these grain-based foods are the ones most people are familiar with. Differentiating Between Good and Bad Carbs Carbohydrates provide energy to every cell in your […]

Eating Right With Celiac Disease

Celiac disease is estimated to affect one out of 141 of Americans, or just under 1 percent of the population. The Academy of Nutrition and Dietetics encourages Americans to learn about celiac disease – it can affect your health or someone you love. What is celiac disease? It is a hereditary, autoimmune disease caused by intolerance to the food protein, gluten – which is found in wheat, barley and rye. When people with celiac disease eat gluten-containing foods, the lining of the small intestine is damaged and eventually destroyed, preventing nutrients from being absorbed adequately. Untreated, celiac disease can lead to […]

Here’s Your Guide to a Gluten-Free Pregnancy

It’s certainly common to worry during pregnancy. Things like what vitamins to take, what to eat, how much to eat and what to pay attention to when getting blood work done are just some of the common worries that women have. These questions carry even more weight for those of us who have celiac or gluten-intolerance. A few months ago, I shared my personal journey regarding celiac, fertility, and successfully getting pregnant once starting a gluten-free diet. Because I was diagnosed with celiac just a couple of months before I became pregnant, I had lots of questions. Were there extra steps I […]
