Veracruz Street Corn Bowl

Mexican street corn (maíz callejero) is roasted ears slathered with chile powder and mayonnaise. My version treats the corn with a lighter touch, calorically speaking, and includes black beans, brown rice, and the crunch of Romaine and jicama. Benefits: Black beans contain protein, tissue-repairing lysine, vitamin B-6 for producing energy, calcium for building strong bones, and collagen-building zinc. Corn provides zinc, eye-healthy lutein, and superoxide dismutase (SOD) an antioxidant and anti-inflammatory that fights free-radical damage in your cells. Brown rice is full of fiber for gut health as well as beneficial trace minerals. Serves 4 Ingredients 4 ears corn, shucked […]

Pico de Gallo

I like to prepare this condiment in different ways: chunky when scattering over my Mexican Lettuce Wraps, and smooth as a dip for my Flaxseed Tortillas. In addition to all of the age-defying and healthy benefits of tomatoes, the indoles (sulfur compounds) in onions help neutralize carcinogens. Cilantro is a good source of vitamin K, which helps keep your bones strong. BENEFITS: Tomatoes contain lycopene, which lowers cancer risk and aids cognitive function. Pineapple Black Bean Salsa

Party food can most definitely be colorful, delicious, and healthy at the same time. This pineapple black bean salsa is a perfect example. Pineapple, beans, avocado, and other nutrient-dense ingredients combine to create a festive dish that promotes optimal energy levels, digestion, and wellbeing. This dish is also versatile. Try serving it with tortilla chips as an appetizer or use it as a sweet and spicy topping for grilled tofu or fish. Either way, it’s sure to be a hit at your next summer barbecue. Serves 6-8 Ingredients 1 pineapple, peeled and diced (about 2 ½ cups) 1 ¼ cups […]

Refreshing Papaya Relish

This refreshing relish will help boost your immune system and keep your skin young and elastic. Papaya is rich in vitamin C and beta-carotene, which your body converts to vitamin A. It’s also high in potassium. Certain enzymes in papaya aid digestion. I use this salsa on grilled meats and fish, such as my Grilled Swordfish in Secret Marinade, and it’s also delicious as an appetizer with whole-grain chips. YIELDS about 4 cups Ingredients 2 cups cubed papaya, ripe but still firm ¼ cup seeded and chopped red bell pepper ¼ cup chopped red onion 1 tsp. minced garlic ½ […]

Strawberry-Avocado Relish

No cooking is required for this condiment. The strawberries, avocado, and cilantro all contain antioxidants. Strawberries are also very high in vitamin C and flavonoids, while avocados also provide glutathione, a detoxifying agent. I use this relish with my Summertime Grilled Chicken, but it also makes a great topping for grilled fish and a satisfying dip for whole-grain tortilla chips. YIELDS about 2 cups Ingredients 1 1/2 cups diced strawberries 1 diced medium-size avocado 1/4 cup minced red onion 1/4 cup lime juice (about 2 limes) 1 Tbs. chopped cilantro 1 tsp. sugar Sea salt and ground pepper to […]
