Vegetarian Stir-Fried Annatto Noodles

These colorful noodles, which are made with my Annatto Oil and Annatto Water, are as delicious as they are healthful. They can be served as a main course, appetizer, or side dish. I use cornstarch noodles, but you can use glass or rice noodles. You can substitute other varieties of mushroom, and almost any cabbage will work–Napa, savoy, bok choy, green, or even red. You can use store-bought vegetable broth instead of homemade. This is a gluten-free dish, so I use tamari sauce instead of soy sauce. Bragg Liquid Aminos provides even more flavor. BENEFITS: Annatto contains vitamin E for […]

Blueberry Hemp Milk Smoothies Hemp is the natural fiber from the stalk of a cannabis plant. Hemp seeds and the hemp milk made from them are beneficial to your skin. Summer Dishes Up Veracruz Street Corn Bowl

Veracruz Street Corn Bowl Mexican street corn (maíz callejero) is roasted ears slathered with chile powder and mayonnaise. My version treats the corn with a lighter touch, calorically speaking, and includes black beans, brown rice, and the crunch of Romaine and jicama. Benefits: Black beans contain protein, tissue-repairing lysine, vitamin B-6 for producing energy, calcium for building strong bones, and collagen-building zinc. Corn provides zinc, eye-healthy lutein, and superoxide dismutase (SOD) an antioxidant and anti-inflammatory that fights free-radical damage in your cells. Brown rice is full of fiber for gut health as well as beneficial trace minerals. Serves 4 Ingredients […]

Tropical Mango-Habanero Salsa

The mangoes in this salsa give it a tropical flavor profile. Their sweetness nicely balances the zing from the vinegar and the heat from the habanero. This salsa is delicious over chicken or fish. If you want less heat, remove all the habanero seeds. Benefits Mangoes, like all orange fruits and veggies, contain antioxidant carotenoids, which help inhibit cancer and tumor growth, reduce your risk of heart disease, and support healthy immune function. The vitamin A in mangoes supports the healthy growth of skin and hair and keeps your eyes healthy. Unpasteurized vinegar contains many different nutrients, including those from […]

Chaat Masala Spice Blend for Beauty

You almost always find this simple spice blend in Indian homes where they add it to fruit salads or sprinkled onto melon. It’s also good when added to grilled chicken or fish. You can find amchur (dried mango powder) on Amazon.com and even in Wal-Mart. Benefits: Mangos have vitamin C which aids tissue regeneration because it’s a precursor to collagen; folate which promotes healthy red blood cell production and supports natural cell growth and replication; and cancer-fighting and immune-boosting carotenoid antioxidants. Yields about ¼ cup Ingredients 2 Tbs. cumin seeds, roasted for a minute over medium heat, then ground 1 […]

Grilled Artichokes With Moringa Dip

In this tasty appetizer, I pair moringa–which is loaded with strength-building protein, calcium, iron, vitamins A and C, and potassium–with artichokes, which add lutein for eye health and fiber for gut health. I like to steam the artichokes first and finish them on the grill, but you can omit this step to save time. Add other grilled vegetables such as red bell peppers, zucchini, and asparagus to expand on this delicious party food. SERVES 4-6 Ingredients 4 artichokes, trimmed and steamed for 30 minutes 2-3 Tbs. olive oil 1 cup olive oil mayonnaise 1 Tbs. finely chopped red onion 1 […]

Stir-Fried Korean Glass Noodles

Korean glass noodles are made from sweet potato starch. Gluten-free and low-calorie, they have a springy texture and a neutral flavor. In Korean BBQ restaurants, this dish is known as Jap Chae or sometimes Chap Chae. In this recipe, I jazz them up with marinated meat, stir-fry vegetables, eggs, and a sesame sauce. By cooking and assembling the noodles, meat, vegetables, and eggs, this becomes a perfect party dish: your guests can toss together exactly what they want. Traditionally, these noodles are served with a scrambled egg on top, but you can omit it. You can use chicken or tofu […]
