Veracruz Street Corn Bowl

Veracruz Street Corn Bowl Mexican street corn (maíz callejero) is roasted ears slathered with chile powder and mayonnaise. My version treats the corn with a lighter touch, calorically speaking, and includes black beans, brown rice, and the crunch of Romaine and jicama. Benefits: Black beans contain protein, tissue-repairing lysine, vitamin B-6 for producing energy, calcium for building strong bones, and collagen-building zinc. Corn provides zinc, eye-healthy lutein, and superoxide dismutase (SOD) an antioxidant and anti-inflammatory that fights free-radical damage in your cells. Brown rice is full of fiber for gut health as well as beneficial trace minerals. Serves 4 Ingredients […]

Tropical Grilled Chicken with Mango-Habanero Salsa

Chicken breasts are the perfect vehicle for zesty tropical flavors. Calamansi is a citrus hybrid also known as Philippine lime. It’s popular in Asian (especially Southeast Asian, Malaysian, and Indonesian) cuisines. If you can’t find it in an Asian market, you can use more traditional limes or lime juice. My Tropical Mango Habanero Salsa is not just good with chips, it’s also delicious over grilled chicken (or even steak or shrimp). You can serve this dish alongside my Jamaican Rice with Curried Corn, which is another delicious recipe in my new cookbook, Anti-Aging Dishes from Around the […]

Cool Down with Gazpacho & GF Croutons

Usually as we near the end of September, I’m blogging about yummy Fall soups and stews, pot pies and warm, baked breads. Can you believe this heat? I couldn’t bring myself to share a steaming hot recipe with you without breaking a sweat just thinking about it. Not only did I want to share something cool and refreshing, I wanted it to include tomatoes. Have you seen the tomatoes lately?! They are so fresh, so colorful and so tasty. My father’s gazpacho recipe has been a family staple for decades, and it’s the perfect pair to freshly baked gluten-free croutons. […]

Lemon Herb Bean Soup

Soup isn’t just for winter anymore! This hearty, flavorful soup features anti-inflammatory ingredients balanced with fiber for gut health, protein and healthy fats. Plenty of fresh and dried herbs and spices liven up the flavor as beans take the center stage in this dish. Blending part of the soup helps it maintain a complex texture while taking on a creaminess. Soup makes wonderful leftovers as flavors mingle over time. It also freezes well so it is perfect for weekend batch cooking and planning ahead for busy weekends ahead. Enjoy this light, healthy soup this spring. SERVES 6 Ingredients 2 Tbs. […]

Try DIY Gluten-Free Granola Two Ways

Before I was diagnosed with celiac, granola was one of my favorite go-to breakfasts. I always kept my favorite brand handy for quick on-the-go breakfasts and was more than disappointed when I realized it had to be eliminated. Not until I began cooking more of my own meals did I realize that I could also create my own gluten-free granola. I began looking up recipes and found a few that have become steady breakfasts around here. They are simple and so delicious that I’d love to share my two favorites. Granola is the quintessential breakfast food. It’s easy to prepare, […]

We’re Crazy for This Coconut Rice Cake

Eat this chewy cake warm. It’s great plain or drizzled with my berry sauce for extra antioxidant power. Be sure to use the chewy variety of rice flour sometimes called sweet white rice flour or mochiko. You can substitute fresh or frozen blackberries for the boysenberries. You can use gluten-free baking flour instead of the cake flour, and xylitol instead of sugar. Coconut Rice Cake Coconut contains lauric acid, which improves cholesterol balance and protects prostate health. Berries are full of anthocyanins, which inhibit the growth of cancer cells. Serves 6-8 Ingredients 2 eggs (organic, free-range, or omega-3-enriched) ½ cup […]

Chinese Tea-Infused Rice with Duck Breast

I love the trick of infusing rice or noodles with tea. It really amps up the nutrient value of any dish while adding a nice bit of flavor. Pu-erh tea is fermented, making it even healthier than regular green tea. Traditionally this dish is made with glutinous rice, but I changed it to brown rice for the health benefits. Feel free to use turkey or chicken breast in place of the duck breast. You can find Thai basil at Asian markets and some supermarkets. This comfort food meal pairs well with my California Hempseed Salad with Strawberries and Kale. Benefits: […]
