Ashitaba Potato Salad

Potato salad is a great way to showcase ashitaba leaves. These healthful leaves, grown in Japan and Southeast Asia, are often dried, ground and taken as a dietary supplement. I grow my own ashitaba plants here in Southern California and I like to eat them fresh. The dark green leaves taste like spinach or sweet kale. But if you can’t find fresh ashitaba leaves, this potato salad is delicious without them. I like to use fingerling potatoes, but you can use small white new potatoes or Yukon gold potatoes instead. I prefer the French haricot vert variety of green bean, […]

Lentil Salad

Lentils contribute muscle-building protein, detoxifying fiber, and vitamin B6 to this hearty dish, making it both satisfying and energizing. The red cabbage, red wine vinegar, and leeks add a host of disease-preventing benefits: anthocyanins, indoles, isothiocyanates, sulfur compounds, and resveratrol. You can also serve this delicious salad as a main course. SERVES 2 Ingredients 1 cup of dried green or black lentils 5 Tbs. extra virgin olive oil 1 chopped leek (white part only) ¼ cup red wine vinegar ½ teaspoon Dijon mustard 1 minced shallot Sea salt and ground pepper to taste ½ cup shredded red cabbage ¼ cup diced […]

Egg Salad with Turmeric

It’s hard to beat the combination of eggs, celery, and turmeric for brain health. You can spread this egg salad on toast, eat it in a sandwich, or serve it on a bed of mixed greens. It’s delicious with sliced tomatoes or thinly sliced scallions. For extra antioxidant power, add a few teaspoons of minced parsley or watercress. I prefer the taste of free-range hens (adult female chickens) whose yolks get their bright yellow color from the marigolds and grubs they graze on. SERVES 3-4 Ingredients 6 eggs (organic, free-range, or Omega-3-enriched) ½ cup mayonnaise 2 Tbs. capers ¼ […]

Strawberry Hempseed Kale Salad

A simple massaged kale salad gets an anti-inflammatory boost from antioxidant-rich strawberries and essential fatty acids from hemp seeds. This is an easy make-ahead salad that can be stored in the fridge for 2-3 days, eaten as a side dish or on its own topped with a lean protein. Chef Notes: -If using baby kale, you do not need to massage the leaves as they are already tender. -Extra vinaigrette will store in the fridge for 5 days in an airtight container. SERVES 2-4 Ingredients For the salad: 1 bunch of curly green kale, de-stemmed and roughly chopped into pieces […]

Bitter Melon Salad

Bitter melon, which resembles a wrinkly, light-green cucumber, is something of an acquired taste. Soaking it in salted water to remove the bitterness is the first step in getting people to fall in love with it. It’s worth the trouble, because boiling bitter melon in water releases its antioxidant power. Bitter melon also has immune-boosting beta-carotene, potassium, and detoxifying fiber. Asian herbalists prescribe it to diabetes patients to help them stabilize their blood sugar. This salad makes an excellent side dish for grilled meat, fish, and vegetables. Serves 2-4 Ingredients 4 medium-size bitter melons ¼ cup kosher salt Pinch of […]
