Shrimp and Grapefruit Salad

Shrimp and Grapefruit Salad Pink grapefruit and shrimp come together nicely in this salad thanks to a rich, tangy buttermilk dressing. You can use white grapefruit, but you will lose some of the health benefits of pink grapefruit. Pink grapefruit is full of healthful compounds—anthocyanins, flavanoids, lycopene, polyphenols, quercetin, sulfur compounds, and vitamin C—that provide loads of antioxidant power for promoting artery and heart health and protecting against sun damage and skin aging. The shrimp offer heart-healthy Omega-3s and selenium and zinc, both of which help maintain a robust immune system. Serves 4 Ingredients 1 lb. tiger shrimp 1 Tbs. […]

Asian Chicken Salad with a Tasty Twist

In my version of Chinese chicken salad, I use mangoes instead of Mandarin oranges. The base of the dressing is a bottled sweet chili sauce. The crispy noodles, though not very healthy, are fun in moderation. Chicken is a great source of lean protein, which helps keep your appetite in check and maintain muscle mass. Cabbage contains indoles and isothiocyanates (sulfur compounds), both of which have anticancer potential. Vitamins C and A in mangoes fight inflammation and support immune function.. Serves 4 Ingredients 1 cup peanuts (raw or roasted), separated into halves ¼ cup olive oil 2 cups shredded Napa […]

Exotic Fruit Salad with Granola

My recipe for Exotic Fruit Salad, which is featured in my new cookbook – The Age Beautifully Cookbook — is a protein-packed, vitamin-filled way to grab a healthy snack or start your morning. You can add spices, such as nutmeg, cardamom, and allspice (about ⅛ tsp. each), and nuts. Instead of exotic fruits you can use grapes, blackberries, strawberries, and/or bananas. The Omega-3 fatty acids in the flaxseeds are great for your arteries and heart. Oats and fiber are both known to reduce cholesterol. The exotic fruits in this recipe are full of antioxidants and vitamin C, which helps […]

Ashitaba Potato Salad

Potato salad is a great way to showcase ashitaba leaves. These healthful leaves, grown in Japan and Southeast Asia, are often dried, ground and taken as a dietary supplement. I grow my own ashitaba plants here in Southern California and I like to eat them fresh. The dark green leaves taste like spinach or sweet kale. But if you can’t find fresh ashitaba leaves, this potato salad is delicious without them. I like to use fingerling potatoes, but you can use small white new potatoes or Yukon gold potatoes instead. I prefer the French haricot vert variety of green bean, […]

Lentil Salad

Lentils contribute muscle-building protein, detoxifying fiber, and vitamin B6 to this hearty dish, making it both satisfying and energizing. You can also serve this delicious salad as a main course. SERVES 2 Ingredients 1 cup of dried green or black lentils 5 Tbs. extra virgin olive oil 1 chopped leek (white part only) ¼ cup red wine vinegar ½ teaspoon Dijon mustard 1 minced shallot Sea salt and ground pepper to taste ½ cup shredded red cabbage ¼ cup diced […]
