Sweet Potato and Jackfruit Delight

This dessert is very popular in Asia. Jackfruit, one of the world’s largest tree fruits, is very high in antioxidants and has a mild tropical taste. You can find it fresh in some markets and canned in Asian markets. Be sure to get ripe jackfruit which is yellow in color. Coconut milk helps hydrate the skin and keep it elastic. Sweet potatoes are packed with carotenoids and potassium.   SERVES 6-8 Ingredients ¼ cup tapioca 2 cups water 1 can (8 oz.) jackfruit, drained of syrup 4 cups coconut milk 1 lb. peeled and cubed yellow and orange sweet potatoes […]

Brazil Nut Tarts Are More Than Just Desserts

These tarts, with their hint of lime and rich texture, take Brazil nuts to a new level. Brazil nuts are full of detoxifying selenium and protein, as well as hearty-healthy omega-3s, which help to keep your skin elastic and hydrated and help to reduce swelling and redness. I like to make several small tarts from this recipe, but you can make large tarts if you prefer. SERVES 4-8 Ingredients 2 (9-in.) whole-wheat pie crusts 1 can (12 oz.) fat-free evaporated milk 2 Tbs. tapioca flour diluted in 4 Tbsp. water 2 beaten large eggs 2 Tbs. coconut butter 2 Tbs. […]

Strawberry Almond Cake

This almond cake recipe works well with gluten-free flour. I prefer the taste and texture of Cup4Cup flour. I also use monk fruit sweetener, which works beautifully as a sugar substitute. I recommend buying a brand that has been blended with erythritol so that you can replace it 1:1 with white sugar, like Lakanto, which makes both a classic variety and a Golden variety that substitutes for brown sugar. It’s available on Amazon, in Walmart, or in health-food stores. This cake is delicious even without the whipped-cream topping. Benefits: Monk fruit sweetener is made from the juice of the monk […]

6 Tips for Celebrating a Green Thanksgiving

Turkey: Fifty years ago, Americans did not eat the over engineered bird that we consume today. We dine on heritage turkeys. Firmer, richer, juicier, and more flavorful–for these birds, gravy serves no purpose. Find your turkey at www.orangicprairie.com Use their convenient drop down menu to choose your state and view their selection of turkey farms. Pick your bird after browsing photos and prices. Be sure to start your turkey search well ahead of time. A heritage turkey will cost more, but resources are saved when you’re not cooking the turkey overnight or soaking it in brine. Knowing your bird wasn’t […]

Rosemary Apple Dessert Bars

Cookies and pies abound during the winter holidays so why not mix things up with naturally sweet apple bars as a unique alternative? The crumbly top offers a familiar texture while the presence of rosemary and lemon blended with apples provides a flavor profile your guests won’t be expecting. Use a tart, firm apple like Fuji or Granny Smith. Cut these bars up and gift them in a festive tin or on a plate wrapped with a bow to celebrate time together with family and friends in a healthier way and without another trip to the mall. Apples have quercetin […]

Prune and Walnut Bars

Prunes and walnuts are both exceedingly high in antioxidant power. Both are listed by the U.S. Department of Agriculture on the ORAC (oxygen radical absorbance capacity) scale with over 10,000 units. Eating a ¼-cup serving of prunes, or about four prunes, provide you with 12% of the daily value for fiber, 32% of the daily value for vitamin K and 9% of the daily value for potassium. A hundred grams of prunes (about ½ cup) provides at least 9% of your daily needs for the B vitamins, niacin, riboflavin and vitamin B-6.  Walnuts have heart-healthy omega-3 fatty acids and detoxifying […]

Rich Chia Seed Pudding

Chia has gained recent popularity for good reason; these little seeds are nutrient powerhouses–high in protein, detoxifying fiber and anti-inflammatory omega-3 fatty acid alpha-linolenic acid (ALA). Including chia seeds in your diet can deliver a healthy breakfast or afternoon energy boost because chia is associated with vitality and satiety due to the balance in fat, fiber and protein they contain. Chia seeds absorb water and expand, so if you enjoy the consistency of tapioca or rice pudding, this is a great snack for you. Ingredients 2 Tbs. chia seeds 3/4 cup unsweetened almond milk 1 Tbs. sliced or slivered almonds […]

Almond Blueberry Gelatin Parfaits

The flavors and colors of the almond and blueberry gelatins play off each other beautifully in this dessert. Blueberries rank very high in their ability to fight free oxygen radicals that damage cells. They also contain vitamin C and antibacterial elements called anthocyanosides, which are great for maintaining vein health and your immune system. Almond milk is an excellent source of antioxidants. These chocolate chip and spice cookies are packed with wholesome ingredients like walnuts, rolled oats, whole-wheat flour, and applesauce to reduce caloric content while maximizing nutrients. They are made without butter and without white or brown sugar, yet they maintain a traditional taste and texture. Oats have anti-inflammatory, antioxidant, anti-itch, and anti-irritant properties.
