What is a FoodTrient?

The inspiration for my empowering FoodTrients program—this website, the cookbook, my board of advisors—really came from my father.  He was a physician and he had a way of looking at food as though it could heal us.  He understood the value of the vitamins and minerals found in fresh foods and how those elements could influence our health.  Foods like organic fruits and vegetables, wild fish, and humanely raised animals have so many good things in it: antioxidants, omega-3 fatty acids, vitamins, minerals, anti-inflammatory agents, fiber, and anti-bacterial compounds.  I needed to come up with a term to encompass the […]

Flaxseed Meatloaf

Meatloaf with Flaxseed

This Middle Eastern–style meatloaf is actually a ground beef and pine nut filling between two layers of a seasoned meat paste. The nutty flavor of flaxseed combines well with grassfed ground beef, which has more healthful omega-3s and conjugated linoleic acids (CLAs, or healthful fats) than you’ll find in grain-fed beef. Tomato paste gives this dish a lycopene lift. For a spicier meatloaf, use red pepper paste instead. I like to eat this dish drizzled with lemon juice to bring out all the flavors. SERVES 4-8 Ingredients ½ lb. grass-fed ground beef, divided ½ cup flaxseeds 2½ cups bulgur wheat […]

Spinach and Grapefruit Salad

Spinach and Grapefruit Salad

Spinach contains iron as well as age-defying antioxidants. Grapefruit is chock-full of vitamin C and potassium. You can use vitamin-C-packed pink or white grapefruit in this salad, though pink grapefruit has the added benefit of lycopene. If you use whole segments of the grapefruit, you’ll also add fiber. The candied walnuts and dried apricots balance the acidity of the grapefruit and increase the antioxidants in this dish. My Honey-Lime Dressing perfectly compliments the mellow flavor of the spinach. SERVES 2 Ingredients 1 bunch or 1 bag spinach leaves 1 whole grapefruit, segmented ¼ cup candied walnuts ¼ cup dried apricots 2 […]

veggie soup with moringa leaves

Moringa Vegetable Soup

In Africa and Asia, where protein-rich moringa plants grow in abundance, people add the tiny leaves to soups and stews just before serving. The leaves are wilted by the hot liquid but are not fully cooked, so their vitamins stay intact. I also like the flavor of moringa combined with antioxidant-rich squash, eggplant, and okra (another African ingredient). For this soup, any smoked fish, such as salmon, can be used. To make this soup vegan, use vegetable stock in place of the chicken stock and omit the fish or fish sauce. To give this soup an Asian flair, add […]
