Shrimp in Tomato Sauce Mediterranean Style

Shrimp and tomatoes are a very Mediterranean combination. I use soy sauce in place of salt and add Worcestershire sauce to create a nice depth of flavor. This recipe uses a procedure that allows you to create smoked fish at home without using a smoker. Though it takes approximately 6 hours to brine, marinate, and bake the fish, it does not require considerable effort. The secret ingredient is hickory-flavored liquid smoke. Pork Loin Pockets

I spread pork tenderloin slices with tomato paste to give this dish the antioxidant  benefits of licopene. Canadian bacon has less fat than its American counterpart. It also adds a lot of flavor. Cornish Game Hen and Brown Rice Stew

This thick and hearty stew is my take on the classic Asian chicken soup. The brown rice makes it even healthier thanks to its high-fiber, selenium-rich properties. Feel free to add carrots, celery, or spinach to the mix. Add hard vegetables earlier in the cooking process and greens or herbs later. I like to soak the brown rice overnight before cooking it. Turmeric Orange Juice

An ounce or two of turmeric juice mixed with a glass of freshly squeezed orange juice makes a healthy and refreshing beverage. The turmeric and vitamin C in the orange juice double the antioxidant power of this drink. Turmeric also helps reduce inflammation. Açaí Sorbet

Açaí berries are deep-purple powerhouses, super-rich in antioxidants and anthocyanins. Both properties are great for keeping your body young and healthy. This beautiful frozen confection is very easy to make. Servings 2-4 Ingredients  1 egg white 3 Tbs. sugar 2 cups açaí juice Procedure Using a stand or hand-held mixer, whip the egg white and sugar until soft peaks form, about 5 minutes. Salmon Poached in Pickling Spices

Pickle juice makes a nice poaching liquid, but I’ve found that pickling spices without the vinegar are even better for poaching fish, especially salmon. You can make your own spice mix or you can buy prepackaged pickling salts. I top this poached salmon with my Pecan and Sundried Tomato Tapenade and my Mock Sour Cream. It can be served hot or cold.
