Salmon Poached in Pickling Spices

Pickle juice makes a nice poaching liquid, but I’ve found that pickling spices without the vinegar are even better for poaching fish, especially salmon. You can make your own spice mix or you can buy prepackaged pickling salts. I top this poached salmon with my Pecan and Sundried Tomato Tapenade and my Mock Sour Cream. It can be served hot or cold. BENEFITS: Salmon is an excellent source of heart-healthy Omega-3 fatty acids, which can also help improve cognition. Omega-3s beautify your skin by reducing inflammation and enhancing the skin’s ability to retain moisture. SERVES 4 Ingredients 3 cups water […]

Holiday Entrees Serve Up New Traditions

I love turkey as much as the next person, but sometimes when I’m entertaining I want to show off my cooking chops. We all get into that culinary holiday rut of turkey, ham and beef roasts. 5 Healthy Foods for Your Brain

When reading Dr. Eric R. Braverman’s book, Younger (Thinner) You Diet, I was impressed by how much space he devotes to eating foods that promote brain health. I’ve known for years that eating the right antioxidant-rich, organic foods can keep your body young and healthy. But I didn’t realize how much our diet can affect our brains. Omega-3 fatty acids are crucial for feeding the brain, which needs fat to produce neurotransmitters. This means ingredients such as: Salmon – Salmon is an excellent source of heart-healthy Omega-3 fatty acids, which can also help improve cognition. Fresh produce – One study found that seniors who ate close to […]

So, we asked a few Palm Beach County health experts for tips on maximizing brain health… BRAIN-BOOSTING FOODS Load up on […]

GMO Salmon Approval Backlash

WASHINGTON – The Food and Drug Administration’s decision to approve genetically modified salmon will still leave consumers in the dark about what’s in their food, underscoring the need for a mandatory, national GMO labeling requirement, The Environmental Working Group (EWG) said today. “Foods with genetically modified ingredients line the shelves of our supermarket aisles, and today the federal government gave the green light to the first GMO salmon,” said Colin O’Neil, EWG’s director of agriculture policy. “Yet we will still have no way of knowing whether what we’re eating has been genetically modified.” The salmon is the first GMO animal […]
